Physico-chemical properties of sago starch in Malaysia

Abstract

Twenty local sago starch samples were analysed for their physico-chemical properties. Most of the samples were found to be white and passed through the 125 μm sieve. Fifteen of the samples had viscosity peaks of more than 600 Brabender units. The starch content of the samples was within the range of 72.3– 78.5% while their moisture content was 9.7–12.8%. The amylose content of all the samples was high ranging from 41.4% to 46.8% while the pH of their aqueous extracts was 3.58–5.94.
