Abstract
Grey oyster mushroom (Pleurotus sajor-caiu) with90 ainitial moisture content was dried at 40-65°C in the laboratory and by using solar drier. Moisture reduction and drying rate were measured during the drying experiments. The quality of dried mushroom was measured based on the colour and water reabsorption capability. These variables were also measured during storage. Drying cost was cstimated to be M$35 when solar drier was used.
