Abstract

Durian (Durio zibethinus) is a tropical fruit native to Southeast Asia. The use of amylase, cellulase and pectinase to modify physical properties of durian aril (DA) and durian rind (DR) slurries was studied. Treatments of DR slurries with pectinase, combination of pectinase and cellulase, combination�� pectinase, cellulase amylase���� produ�����ced�� �������� with��� lo��wer�� p�H, higher������ solu����bilit����y ���� ��wer�� vis��cosit����y than����� DR �������� in���cu�bated���� without������ enz����yme���. The�� ����yme��� treatment�����������, ho��we�ver��, sho���wed�� no��� su��ch� effe����ct� on��� the��� ��ysi��cal�� ���������� �� DA ��������. Anal����ysis��� �� sugars������ ���� gala����cturoni�������c �cid�� �����ced�� ��� ����yme���-treated������� DR �������� pro���vided���� some����� indi�����cation������ �� s�ynergisti���������c ����cts�� �� ��ctinase������� ���� cellulase�������� ��� disrupting����������� ��� cell��� wall��� �� DR. Overall����� results������� con���clude���� that���� ��ctinase������� was�� ��� most����� ����cti��ve� ��� h�ydrol����yzing����� pol���ysa��ccharides������� ��� DR compared�������� �� cellulase�������� ���� ���ylase����. This��� preliminar������������y result������ �����cates���� ��� possi�����bilities������� �� ����ying���� ��ysi��cal�� ���������� �� DR �������� by using������ ����yme��� treatments������������.
