Enzymatic acidolysis of palm olein with PUFA to improve linoleic and α-linolenic acids ratio

Abstract

An enzymatic acidolysis to produce modified palm olein with high PUFA (linoleic acid, C18:2n-6 and α-linolenic acid, C18:3n-3) was carried out. An immobilized lipase, Lipozyme TL IM was used as the biocatalyst. The optimum reaction conditions were found at oil:fatty acid mole ratio of 1:2, temperature 50 °C, incubation time 24 h, 1% water in hexane and 10% enzyme. Under these conditions, modified palm olein shows high iodine value of 123.08 mg I/100 g oil due to increasing linoleic acid (24.46%) and α-linolenic acid (3.74%) content. Linoleic and α-linolenic acid ratio of 21:1 in palm olein was improved to 8:1.
