Abstract

'Keropok' with 49%-55% initial moisture content were dried using solar drier model SG-3600M at two drying temperatures( 48oC and 60oC). Drying takes 3-4.5 hours depending on the drying temperatures. The dried product recovered after drying was 50%-53% with the final moisture content about 10 percent. The quality of the sun-dried products was comparable to those that were dried using solar drier. Drying cost was estimated to be M$1.20/kg of dried 'keropok' produced.
