Abstract
The shelf life of brown rice can be prolonged up to 6 months, if stored in vacuum packaging or with oxygen absorbent packaging, without affecting its quality. Storage in polyethylene plastic material lasted only 3 months due to serious insect infestation. Texture, flavour and the overall acceptability of cooked brown rice showed no significant difference (p = 0.05) between control and treated samples.
