Abstract
Paddy with an initial moisture content of 17.6–27.9% was dried to a final moisture content of 11–13% within 18–27 h. The average temperature and relative humidity of air for drying were 37.3 °C and 48.4% respectively. The fast drying method increased the content of crack grain by 2.23–19.88% (average 7.40%). The temperature difference between the layers of paddy (bottom, middle and top layers) was 2.13–4.70 °C. The average milling yield (based on the paddy weight basis) and the head rice recovery (based on the total rice basis) were 66.93% and 68.44% respectively.
