Abstract

Physiological and biochemical changes in packed and unpacked papaya (Carica papaya L. cv. Eksotika) fruit were studied during storage at 10 0C for 6 weeks and upon exposure to ambient temperature (25–28 °C) after 2, 4 and 6-week storage periods. Respiration rates and ethylene production of unpacked fruit were always higher than the packed fruit during storage at 10 °C. A similar trend was shown when the fruit were exposed to ambient temperature. Level of internal ethylene, 1-aminocyclopropane carboxylic acid (ACC), activity of ACC synthase and ACC oxidase appeared to be affected by the stage of ripening and degree of fruit injury.
